VENDOR SPOTLIGHT: COURAGE COOKIES

Unique in design and theme, each Pop-Up Chapel works with some of the best-in-class vendors in the city to bring our vision to life and create a one-of-a-kind experience for our couples! Serving Toronto and the GTA, Courage Cookies makes delectable cookies in a variety of flavours that are not only delicious but they are also supporting their community. A portion of the revenue made from the sale of their cookies is donated to support a cause in need. They have been featured as a partner on over 4 Chapels so far!


Tell us a little about your business and how long you have been in the industry?

Ian and I started this as a midnight snack back in March, very early into quarantine. It was literally... a midnight snack, that through the power of social media and friends and family wanting to order cookies (Lynzie was one of our OG’s!) took off and the stars kept aligning. We're both new to the baker biz, but have over 30 years of hospitality combined!

Which chapel has been your favourite?

Every single one blows my mind and makes the list as my "favourite!" The most recent chapel in Ottawa held a special place in both our hearts. We were both born and raised in Ottawa, seeing our product make it back to our hometown and be served in such a cool atmosphere really touched our hearts. It was 100% a " F YA! " high five moment for us. Also... Lonestar is forever my favourite so was proud to see our name with theirs!

What do you love about working in the wedding industry?

Seeing everyone come together for a magical day and celebrate two important people in their life. Seeing the smiles, the laughs and the tears. Behind the scenes I love the creativity that's put into making someone's dream come true.

How is the chapel unique to your typical work/weddings? What do you love about it?

As a business that started amongst the pandemic, we haven't had the opportunity to do any "traditional" weddings.. yet! We've had tons of inquiries and hope to explore that road in the future. I love the element of surprise that the Chapel brings to every couple and guest in attendance. They have NO idea what they're about to walk into, however, know that it's going to be gorgeous and chose PUC for the biggest day of their life!!

If you could design a chapel what theme would you pick?!

Ouuuuu - I think something nature themed outdoors in a forest (if possible!)

How does the PUC help the causes you are contributing to? If you could design a special wedding cookie what would it be?

A portion of all sales is donated to the organization we're supporting that month! All sales help! Having our cookies at PUC gives us the opportunity for more people, who may not have heard of us otherwise, try them. If they like them - hopefully they'll place an order and/or spread the word! The more business we get = the more money we can give! Ian said he would love to create a stuffed cookie with cherry fling and dark chocolate or a cherry base with dark chocolate filling!

During the months of quarantine, have you found a new hobby or project you've grown to like? If not, is there anything you're working towards/inspired to work on?

COURAGE COOKIES! This midnight snack turned side hustle turned full time job has kept me VERY busy throughout ...2020. I was super sad once the pandemic hit and my internship was cut short and had every intention of returning as soon as I could. It feels like I've blinked and it's nearly 2021. I hope to be back in the event planning world one day...soonish! ;)
